Rain landing on the top of an unfinished wall soaks into it and runs down the face, staining the finish and eventually damaging it. A coping caps the wall and throws the water clear.
A flat coping sheds both ways and suits a free-standing boundary wall. A one-sided coping falls one way only, which is what you want where the wall backs onto a building or a neighbour.
